Clarification and removal of solids in juice by means of the addition of gelatine or Nitrogen into the liquid. This forces solids to rise to the top (floating) and when completed the clarified liquid can be drawn off the bottom of the floating “cap”. This can can be further treated for the maximum recovery of product.
